Thanksgiving Meatloaf

Introduction

I saw this on Rachel Ray and had to try it....I'm thinking it would be even better with homemade stuffing mixed in, healthier too......Let me know if you try it that way how it turns out! I made it as stated below and it was delicious! Tastes just like Thanksgiving! Ingredients

    1 Large Apple, peeled and chopped into small dice
    2 lbs Lean Ground Turkey
    4 Stalks of celery , finely chopped
    1 Onion, medium, finely chopped
    1 T. poultry seasoning
    1 large egg
    2 Cups chicken stock
    2 Cups stuffing mix
    Black Pepper, to taste
    1 T. Olive Oil

Directions

Preheat oven to 400.
In a medium bowl, place stuffing mix and stock together. Let it sit so the mix soaks up the stock.

In a large bowl, put in apples, celery, onion, poultry seasoning, egg, and pepper. Stir it a bit to mix; add in the turkey. Add in the now moistened stuffing mix and mix it all together-your hands work best.

Put it on a lined baking sheet (I used foil) and shape it into a loaf. Yes, it is a big loaf! Coat the loaf with the olive oil and put it in the oven until it is brown and cooked through, about an hour.

Makes 8 very generous servings.
