Grease 9x13 pan. Layer first four ingredients in pan. Add 1 cup cheese over mix. Mix pancake mix, water, milk, egg whites, salt & pepper and sauce in a mixing bowl. Pour over mixture in pan. Sprinkle remaining cheese over pan.
The recipe is good but since I was feeding big appetites I did the following(plus I had red potatoes and not simply potatoes on hand): chopped coarsely about 8 red potatoes, cooked them stovetop with 5 minced garlic cloves and seasoned with spike's. I laid this in the bottom layer. It was a hit!
