Ingredients

    1/2 lb ground turkey
    1 cup onion, chopped
    1 tsp ground cumin
    1/2 teaspoon garlic powder
    1/4 tsp salt
    1/4 tsp black pepper
    1 (16 ounce) can fat-free refried beans
    2 (4 ounce) cans whole green chilies, drained and cut lengthwise into quarters
    1/2 cup Colby cheese shredded
    1 cup frozen sweet corn
    1/3 cup flour
    1 cup 1% Milk
    4 Fresh large eggs

Directions

Preheat oven to 350.
1. Cook turkey and onion in a non-stick skillet over medium heat until browned, stirring to crumble.
Add cumin and the next 5 ingredients, mix well.


2. Arrange half of the green chiles on the bottom a 11x17 baking dish and top with 1/2 cup cheese. Spoon mounds of the chicken mixture onto cheese; spread gently and top with corn.

3. Arrange remaining Chile over corn, top with d cheese. Bake at 350 for 20 minutes.

4. Combine flour, milk and eggs stirring with a whisk until blended well. Pour over casserole.

5. Bake for 1 hour (or until set). Garnish with red onion if desired
