Cajun Ham and Potato Bak

Ingredients

    1Tbsp each red-wine vinegar & Dijon mustard
    2 Tsp Chili powder
    1/4 Tsp Ground Cumin
    1/4 Tsp Ground Red Pepper(cayenne)
    2 Small All-purpose Potatos, scrubbed & thinly sliced
    1 Onion, thinly sliced
    4 Oz Turkey Ham, Diced (1/4 Cup)

Directions

Hat oven to 350 F. Coat a 9 in square baking pan with nontstick spray.
In a medium bowl, combine vinegar, mustard, chili power, cumin and pepper. Add potatos, onion, ham, toss to mix and coat. Transfer to prepared pan.
Cover and bake 40 minute or until potatos are almost tender. Uncover and cbake about 10 minute longer until potatos are tender and browned.
