Lainie's Taco Salad

Number of Servings: 4


    1 lb. Lean Ground Beef
    1 packet of Ole El Paso Taco Seasoning (40% less sodium)
    2/3 cup of water
    Iceburg or Romaine Lettuce
    2 tomatoes
    Baked Cool Ranch Doritos (4 servings)
    Low-fat Cheddar or Colby Cheese (2 cups)
    Ole El Paso Taco Sauce Medium (8 tsps)
    Low-fat Sour Cream (1 cup)


Brown lean ground beef thoroughly; drain and rinse. Add packet of taco season and water. Mix and stir occasionally on low heat for approximately 10 minutes or your desired consistency.

This makes 4 servings.

For each individual serving, mix shredded lettuce and Doritos in a bowl. Add a quarter of the taco meat. Sprinkle 1/2 cup of shredded cheese on top of meat. Add 1/2 of a tomato on top of the shredded cheese. Add 2 tsps of taco sauce and a 1/4 cup of reduced fat sour cream. Mix everything together. Enjoy!
