Yummy crispy low-carb alternative for us chicken nugget lovers!

Number of Servings: 6

Ingredients

    1/2 cup Parmesan
    2 oz (freshly) grated Mozzarella
    1.5 lbs of boneless/skinless chicken breast diced
    2 jumbo eggs
    Canola oil for frying

Directions

Heat your oil in a deep fryer or deep skillet so it's ready to fry (350 degrees)

Dice up your chicken into small nugget sized pieces. Whisk your eggs in another bowl and set aside. Put your parmesan in a bowl and grated your mozzarella in and stir it together very well. Once oil it hot enough dip your diced chicken in the egg and then coat with parmesan. Repeat that until the chicken is well coated (the more cheese the crispier it is. ) Place in your deep fryer/skillet and cook about 30 minutes or until done (make sure to turn it!)
