Quick Chicken Casserole

Ingredients

    8 ounces of pasta (the nutritional information is derived using Barilla pasta.. the new one with omega 3 in it), cooked
    2 cups of cooked chicken (bite sized
    12 ounce frozen bag of peas
    1 can of Healthy Request Cream of Chicken soup
    1/2 c skim milk
    1/2 teaspoon of Thyme OR rosemarry (we used thyme)
    1/2 teaspoon of ground black pepper (less if you have little kids eating it, all though mine didn't notice it too much)
    3/4 cup of part skim mozerrella cheese (or a 1/2 cup of parmesan.. the nutritional information is with the mozerella)

Directions

Boil the pasta and while it's boiling away cook up the chicken. When the chicken is done add the milk, soup, and spices and mix well. Spray a 9x13 pan with non stick spray and preheat the oven to 425.

Drain pasta and add the chicken mixture. Stir well. Add 1/2 cup of the cheese and mix well. Dumpinto the greased casserole pan and sprinkle with remaining cheese. Cook in oven for about 10-15 minutes or until heated through.

  • Very good. Next time I'll use half the peas called in the recipe as my kids didn't care for them that much. I used leftover meat instead of the chicken and it turned out great. - 4/9/07
