Cheesy Chicken Casserole

Introduction

Ingredients

    Ingredients:


    Onions, raw, 1 cup, chopped
    Mushrooms, fresh, 1 cup, pieces or slices
    Zucchini, 1.5 cup, sliced
    Celery, raw, .5 cup, diced
    Garlic, 1 clove minced
    Butter, salted, 3 tbsp melted
    *Tomatoes, red, ripe, canned, whole, no salt - drained and chopped, 1-14.5oz. can
    Basil, .33 tbsp
    Salt, .5 tsp
    crushed red pepper, .25 tsp.
    Ronzoni pasta, 8 oz dry
    Chicken Breast,cooked and chopped, 3 cups
    Fat free half and half, 1.5 cup
    *Kraft Free Shredded Cheddar Cheese, 2 cup
    Parmesan Cheese, grated, .5 cup

Directions

Preheat oven to 350 degrees.
Saute the first five ingredients in butter until the veggies are crisp an tender. Sti in tomatoes, basil, salt, and crushed red pepper. Set aside.
Cook pasta according to directions.
Combine pasta and veggie mixture and chicken in a large bowl. Spoon mixture into an 11X7X1.5 inch (or whatever) baking dish.
Combine half and half and cheeses in a medium saucepan. Cook over low heat until cheese melts, stirring frequently. Pour sauce over pasta, veggie, and chicken mixture. Cover and efrigerate up to 24 hours.
Bake for 40 -45 minutes.
