Healthy Chipotle Cucumber Rounds

Great appetizer to bring to any party so there's a healthy and delicious option! Easy and fast to make, too! Great appetizer to bring to any party so there's a healthy and delicious option! Easy and fast to make, too!
Number of Servings: 30

Ingredients

    2 cucumbers, sliced into 1/4 in. rounds
    1 container chipotle hummus
    6-8 radishes, sliced thin
    fresh cilantro (remember to pull leaves off of stems, as stems are often bitter)

Directions

1. Slice cucumbers into rounds, approx. 1/4 in. in thickness.
2. Slice radishes, very thin
3. Spread chipotle hummus onto cucumbers
4. Layer 1-2 radish slices on top of cucumber rounds
5. Sprinkle cucumber rounds with several leaves of cilantro

Makes 24-30 cucumber rounds
