Asian salad with ginger

Introduction

This is a delicious and interesting salad for those who may be tired of salad.

Ingredients

    Sweet potato, 2 cup, cubes
    Spinach, fresh, 8 cup
    Radishes, 6 medium (sliced)
    *Edamame, Shelled, Frozen, 1 cup (thawed)
    Yellow Sweet Corn, Frozen, 1 cup kernels (thawed)
    *Bean sprouts, 1 cup
    Orange Juice, .5 cup (thawed)
    Sesame Oil, 2 tbsp
    Ginger Root, 2 tsp (chopped)
    Green onion, 6 - 8 (chopped)
    Soy sauce (shoyu), low sodium, 1 tbsp
    Rice vinegar, 1tbsp
    Chicken, turkey, or salmon grilled (optional)

Directions

Cut sweet potato into cubes and steam. Set aside to cool.
Divide spinach, sprouts, radishes, edamame and corn into equal portions (4 for dinner portion, 8 for small salad portion). Add sweet potato, when cool.

Dressing:
Whisk together orange juice, rice vinegar, soy sauce, and 1 tbsp of sesame oil (you may add hot oil, chili paste, or other spicy ingredients for extra kick).

In a sauce pan, heat 1 tbsp sesame oil. Sautee ginger and green onion for one minute. Add to orange juice mixture.

I grill the meat plain and place 3 oz servings in zip top bags with the dressing until I'm ready to eat. The meat takes the flavor of the dressing and it's fantastic!
