Tami's Chicken Tortilla Soup

Introduction

Quick and easy in the Crock-Pot Quick and easy in the Crock-Pot
Number of Servings: 10

Ingredients

    1 lb Chicken Breast
    4 Medium Carrots, chopped
    1 Large Onion, diced
    4 Cloves Garlic, minced
    4 Medium Red Potatoes, chopped
    1 Large Broccoli, chopped
    1 Small Can Tomatoe Paste
    1 Can, Black Beans
    1 Cup Frozen Corn
    2 Cans Diced Tomatoes w/green chili
    4 Cups Chicken Broth
    1tbs Salt
    good shake of Cayenne
    1tbs Cumin

Directions

Add everything to a Crock-Pot. I place the chicken on top. Cover and cook on high 4-6 hours, until chicken & potatoes are done. Shred the chicken. Serve with some cilantro, fat free or low fat cheese and baked tortilla chips.

If making on the stove top, dice the chicken, bring the mixture to a boil then reduce heat and simmer 45 to 60 minutes.
