Lamb Curry with Rice

Introduction

Number of Servings: 6

Ingredients

    2 Tbsp oil
    1 large onion, chopped
    2 cloves garlic, minced
    1 lb lamb, cubed
    1 can (15 oz) tomato sauce
    1 cup beef broth
    1 bay leaf
    1/2 tsp ground cinnamon
    1 tsp ground coriander
    1/2 tsp ground cumin
    1 1/2 Tbsp curry powder (more or less to taste)
    1 tsp ground turmeric
    1 tsp salt
    1 medium potato, cubed
    2 1/2 ounces dried apples, chopped
    3 cups cooked brown rice

Directions

In Dutch oven, saute onions and garlic in oil. Add cubed meat and brown it lightly, adding a little more oil if necessary. Add spices and simmer for a couple of minutes. Add tomato sauce, broth, potato and apples. Simmer for about 1 hour, adding hot water as needed. Makes 6 servings. (Serve 1 cup curry over 1/2 cup hot cooked rice.)
