Spicy Chicken Stir Fry

Ingredients

    2 t chili/sesame oil
    1 3/4 lbs boneless, skinless chicken
    4 med garlic cloves, minced
    1 T ginger
    1t red pepper flakes
    2 t cornstarch
    1 1/2 pkg frozen mixed veg (I used broc)
    3 T low sodium soy sauce
    1 t rice vinegar
    1 t orange marmalade

Directions

heat 1 t of oil. Cook chicken until done and remove to a plate.

Heat remaining oil in the same skillet over hight heat; add garlic, ginger and pepper flakes. Cook, stirring constantly, until golden and fragant.

Add vegetables; cook stirring frequently, until just tender. Stir in soy sauce, vinegar, and marmalade.
Mix cornstarch with 1/4 c water. Add to mix and bring to a boil. Allow to thicken.

Toss vegetable mixture with chicken to heat through. Serve immediately.

I serve over rice.
