1 1/2 lbs boneless skinless chicken breast, cubed
1 medium onion, chopped
3 cloves garlic, minced
1/4 tsp black pepper
1/2 tbs dried basil
2 cups bell pepper strips
2 cups chicken broth
1 28 oz can petite diced tomatoes
1 15 oz can tomato sauce
2 tbs smart balance omega light buttery spread
Add the bell pepper strips, buttery spread, chicken broth, black pepper, dried basil, diced tomatoes, and tomato sauce.
Simmer uncovered for about 30 minutes or until sauce is as thick as you desire.
Serve over pasta (not included in nutritional information).
