Donna's Oatmeal Blueberry Whole Wheat Muffins

These muffins are a nice, healthy alternative. If you're looking for something sweeter, you might want to pass on these. Once cooled, put in the fridge; this makes them easier to remove from the paper. These muffins are a nice, healthy alternative. Ingredients

    1 C. Old Fashioned Rolled Oats Oatmeal
    1 C, Whole Wheat Flour
    1 T, Baking Powder
    1/2 t. Salt
    1 T. Cinnamon
    1/3 C. Splenda (measureable)
    1 Banana, Mashed
    1/3 C. Lite Applesauce (no sugar added)
    3/4 C. soy Milk
    2 Pints Blueberries
    1/3 C. Sliced Almonds

Directions

Pre-heat oven to 350

Thoroughly mix dry ingredients (oats through splenda) in a large bowl.

Mix the mashed banana, applesauce and soy milk.

Mix the went into the dry; toss in the nuts and blueberries (quickly!)

The batter should rise as you mix it (the reaction of the baking powder), Mix just enough to combine - DO NOT OVER MIX.

Line a muffin tin with liners scoop out 12 muffins.

Bake for 15 minutes; wait until completely cooled before removing from paper.
