"Fried" Pineapple Dessert

Submitted by: BEADINCHICK

Introduction

I find this simple dessert quick and easy and a nice finish to a spicy dinner. And with just a little over a hundred calories it fits nicely in my plan. The unsweetened toasted coconut is not in the nutrition info. I did not want to skew the numbers with estimate of a sprinkle. Enjoy. • This was great. I only used 1/2 tsp of lime juice instead of 1 tsp. Had this in the Ozarks and was trying to duplicate the recipe when I found yours - this is very close but they actually deep fry it - I didn't want to do that. This is wonderal! - 10/15/12
