Ingredients

    Ingredients

    * 1 cup all-purpose flour
    * 1 cup whole wheat flour
    * 1/2 cup cane sugar, plus more to sprinkle the muffins with
    * 2 teaspoons baking powder
    * 1 teaspoon baking soda
    * 1/2 teaspoon salt
    * 1 cup low-fat buttermilk
    * 2 cups mashed ripe banana (about 4 large bananas)
    * 1/4 cup unsweetened applesauce
    * 2 egg whites
    * 1 teaspoon vanilla
    * 50 g dark chocolate, chopped

Directions

Preheat oven to 375°F and lightly grease a 12-muffin pan.

In a large bowl, mix together the flours, baking powder, baking soda and salt.

In a separate bowl, whisk together the buttermilk, mashed banana, applesauce, egg whites, sugar and vanilla.

Pour wet ingredients over dry ingredients and stir until just blended.

Spoon batter into muffin cups, filling about three-fourths full.

Sprinkle tops evenly with a bit of cane sugar.

Bake until lightly brown, 15 to 20 minutes.
