Yorkshire Pizza

Ingredients

    1/4 cup unsalted butter (I reduce it to 2 tbsp.)
    1 cup flour, unbleached all purpose
    2 eggs (can substitute egg beaters or the like)
    1 cup 2% milk
    1/4 tsp. sea salt
    1 oz. pepperoni (you can save fat & calories by using turkey pepperoni)
    4 oz. (1 c.) low-fat mozzarella cheese, shredded
    1-2 tsp. dried oregano
    1 c. Ragu Pizza Quick Pizza Sauce

Directions

Melt butter in an 8x12-inch glass pan (9x13 works, too) in 400-degree oven. Beat flour, eggs, milk and salt until smooth. Pour into hot pan. Put pizza sauce on top. (It will run into bottom mixture.) Then add other pizza toppings (I used pepperoni.) Sprinkle with oregano and top with cheese. (I'd recommend Mozzarella.) Bake at 400 degrees for 15-20 minutes.

NOTE: After you remove it from the oven, let it rest and cool slightly, because it can stay hot for a while. Comments: This is a very quick and delicious way to make pizza.
