Introduction

Very easy and quick french baguettes. Calories are per loaf. Recipe makes 4 loaves. I usually have 1/4 loaf with dinner, as a small sandwich, as toast, etc. It doesn't last long! A.K.A. Ingredients

    1 tsp. fast rising active dry yeast
    2 cups warm water
    3.5 cups white bread flour (more for kneading)
    .5 cup whole wheat flour
    2 tsp. salt
    Cooking spray (Pam?)

Directions

Put flours in a large bowl. Add in yeast , salt and water. Stir (I use my hands) until all together, then drop on lightly floured board or counter. Knead for a few minutes till makes a nice smooth ball (maybe 5 minutes max - therapeutic!).

Put dough in clean bowl and put in the oven (don't turn the oven on!). Put about 2 cups HOT water in a heatproof dish or pan (I use a metal bread loaf pan), and put in oven with the dough. Let rise for about 1 hour.

Remove all. Divide dough into 4 equal balls. Roll out each on counter to form baguette shape, maybe 10-12 inches each or so. Place on 2 separate cookie sheets, lightly sprayed with cooking spray. Two on each sheet.

Put back in oven with new hot water to rise for 1 hour. If you get busy and forget - no harm done.

Remove loaves from oven but leave water in. Preheat to 450 degrees. Spray loaves lightly with cooking spray and score diagonally with a knife. Put both sheets in preheated oven WITH the dish of hot water on the side to keep moist. Cook for 15 minutes. After 15 minutes, turn oven down to 400 and cook for 5-10 more minutes.

Makes 4 loaves. Mmmm...homemade bread with minimal effort. Enjoy!
