Baby Bellas and Broccoli Raab

Introduction

Ingredients

    1 lb. of broccoli raab, fresh, chopped
    8 oz. Baby Bella mushrooms --small brown
    1/4 cup onion, finely minced
    2 tsp garlic, minced
    1 Tbs olive oil
    1 tsp butter
    1 tsp soy sauce
    1 tsp turmeric
    Salt and pepper to taste, and to sweat onions and mushrooms.

Directions

This makes 4 half cup servings, and a little extra. It's nutritional info is calculated for 4.

1. Have all your veggies chopped and minced. Wash the broccoli raab, but don't shake off the water, you'll use what clings to the leaves to steam it.

2. Heat 1 Tbs of olive oil over a high flame for about 10 seconds, then add the finely minced onion, sprinkle with a little salt to sweat and let sautee for about 1 minute. Stir, to keep from burning, and continue to sautee until it just starts to become transparent.

3. Add the butter and just let it melt--this is only for flavor to mushrooms, so you can exclude this if you don't eat it, but you will lose flavor. Add the minced garlic, then add all the coarsely chopped mushrooms, again salt to let get them to release their juices, and stir to combine all the ingredients. Let them sautee a good 1-2 minutes until you begin to really smell the mushroom scent, and only stir as needed to keep it from burning. This will sear the mushrooms, intensifying their flavor and giving them a good brown crisp to them. It should take about 5 minutes for the mushrooms to cook, and turn the flame to medium-high if needed, to keep it from burning.

4. Add the chopped broccoli raab, then add spices and soy sauce, toss everything together and let sautee a few minutes, stirring to combine until it starts to wilt. Cover, lower heat to medium, and let steam in the water on the leaves, for about 5-10 minutes until cooked to your taste.

You can also undercook this a little, leaving it al dente, turn off the flame and leave it covered on the stove to finish while you cook the rest of the dinner, and it should be finished in about 10-20 minutes and still warm. This is a great trick to keep from overcooking it.
