Gotta Go No Bake Cookies

Introduction

This is a standard recipe for no bake cookies and I threw in a little fiber. This is a great sweet treat and I don't have to feel too bad about eating some as long as the fiber is in there. Number of Servings: 24

Ingredients

    1/2 cup butter
    1/2 cup milk (or milk sub)
    2 cups sugar (I use evaporated cane juice)
    5 tbsp cocoa powder (or 1 cup chocolate chips)
    3 tbsp peanut butter (optional)
    3 cups oats
    1 tsp vanilla extract
    3 tbsp flax seed or oat bran

Directions

Place cocoa powder (or chocolate chips), peanut butter if you used it, oats, flax seed (or oat bran) and vanilla extract in a large mixing bowl. Combine butter, milk, and sugar in a saucepan; bring to a rolling boil. Boil for one minute. Combine hot mixture with oats mixture. Drop by spoonfuls on waxed paper. Let cool completely or refrigerate for about 30-45 minutes. Enjoy! Makes 24 2 inch cookies.
