Baked Potato chowder

Introduction

This is a slightly lower-fat version of a recipe I found in Fix Freeze Feast. It is a very hearty soup that the whole family enjoyed. Good for company, too. Number of Servings: 12

Ingredients

    1/2 cup (1 stick) butter
    1 cup chopped onion
    3 TB dried parsley
    1 TB beef flavored bouillon granules
    1/2 TB dried basil
    1 tsp salt
    1 tsp ground black pepper
    1 cup flour
    6 cups water
    2 cups fat free half and half
    1/2 pound cheddar cheese cut into chunks

Directions

Wash and bake the potatoes. Let cool, and scoop out the insides. Melt butter into a stockpot and saute onions until clear. Add parsley, basil, garlic, salt and pepper. Stir until aromatic. Add flour to make a paste, then add water slowly. Add half-and-half and potato while stirring. Keep stirring frequently until it starts to thicken. Add cheese and stir until melted.

Makes 12 servings.
