No Noodle Lasagna

Ingredients

    * Zucchini, 1/2 Pound (1 Large), sliced vertically into 6-8 1/8 inch slices
    * Salt, .5 tsp
    * Onions, raw, 3/4 cup, chopped
    * Garlic, 3 cloves
    * Mushrooms, fresh, 2 cup, pieces or slices
    * Ground Turkey, 1 pound
    * Skim Milk, 1/2 cup
    * Spinach, chopped, frozen, 1 package (10 oz) thawed, drained and squeezed dry
    * Ricotta cheese, fat-free, 1/2 cup
    * Nutmeg, ground, 1/8 tsp
    * Oregano, ground, 1/4 tsp
    * Parmesan Cheese, grated, 3 tbsp
    * Mozzarella Cheese, part skim milk, 1/2 cup
    * *Petite Cut Diced Tomatoes, 14.5 oz can
    * 1 Pkt Sweet 'N Low
    * Basil, 2 tbsp

Directions

Makes 8 Servings

Preheat Oven to 400 degrees.

Place zucchini slices on paper towels, sprinkle with salt, cover with more paper towel, set aside for 15 min.

Line baking sheet with foil and spray lightly with non-stick cooking spray. Lay zucchini slices in one layer and bake 15 minutes. Remove from oven and cool.

Brown onion and 2 cloves are garlic 2 minutes. Add mushrooms brown for an additional 2 minutes. Add ground turkey, cook until done. Remove from heat.

In a medium saucepan, bring milk to a boil. Remove from heat. Add spinach, ricotta cheese, parsley, nutmeg, oregano, and 2 tbsp of Parmesan cheese.

Spoon 1/2 of spinach mixture in the bottom of casserole dish, then layer on 1/2 the sausage mixture, and lay 3-4 zucchini on top. Repeat layers ending with zucchini layer.

In a mixing bowl, mix diced tomatoes, 1 clove garlic, Sweet 'N Low, and basil. Pour over your casserole.

Top with mozzarella and remaining tbsp of Parmesan. Bake 40 Minutes.
