Introduction

Ingredients

    1 pkg (15oz) fresh chopped escarole
    1 Tbsp. olive oil
    1 clove garlic minced
    1/2 cup vegetable stock
    1 can (15.5 oz) cannallini beans ( do not drain)

Directions

1. Blanch escarole 1 min. in large pot of boiling, salted water. Drain well. Gentaly squeeze out excess water.
2. Add oil and garlic to large skillet on medium. Cook, stirring , 1 minute. Add escarole:cook, stirring 1 minute. Addstock and beans, simmer covered for 5 minutes

Can add grated Parm-reggiano cheese, not figured in calories
