1 lb chicken breast, pan fried in a little olive oil
1/2 cup chopped white onion
7-8 corn tortillas
I 10 oz. can green enchilada sauce
1 small can sliced black olives
1 small can diced green chiles
3/4 cup cheddar cheese
green onion and sour cream for garnish
Dice chicken breast into small cubes, set aside
begin layering a little sauce, 1/2 corn tortillas, some onion, green chile, chicken to cover botton, then repeat, top with cheese, olives, chopped green onion, Bake covered with foil for 25 min. then uncover for 5 min. Garnish with sour cream.
