Introduction

This makes a great muffin that has a lot of texture and a wonderful mild flavor. This makes a great muffin that has a lot of texture and a wonderful mild flavor.
Number of Servings: 18

Ingredients

    1 Package Betty Crocker's SuperMoist Butter Pecan Cake Mix
    1 can (15 oz.) Pure Pumpkin
    4 oz. chopped Pecans

Directions

Preheat oven to 350 degrees. Put baking cups in 18 muffin tins and spray cups with cooking spray. Spoon heaping tablespoons full of mixture into the cups (you will need to use your fingers, the mix is very thick). Bake for 18 minutes. Remove from oven and let cool. (Note: this was adapted from another recipe and many of them tried adding water/applesauce and found that it did not get solid enough. It is good the way it is with no liquids)
Makes 18 muffins, serving size 1 muffin
