Introduction

Number of Servings: 10

Ingredients

    2 lbs 4% fat ground beef
    1 meduim onion chopped
    1 cup uncooked rolled oats
    2 zucchini medium shredded and water squeezed out = to 2 cups shredded
    1/4 cup non fat milk
    1/4 cup shredded parmesan cheese
    2 tblsp parsley
    1 tsp basil
    1 tsp oregano
    4 garlic cloves minced
    1/2 tsp salt
    4 egg whites from large eggs lightly beaten

    glaze
    1/2 cup ketchup ( i use low carb)
    2 tblsp brown sugar blend
    2 tsp mustard

Directions

preheat oven 350 line rack with aluminum foiul and poke holes spray with cooking spray set aside

shredd zucchini to measure 2 cups

mix all ingredients except glaze together form into 2 meatloafs place on rack

bake 1 hour in oven

mix glaze ingredients and spread over meatloafs continue baking 15 minutes

serves 10- each loaf serves 5 (1 slice per person)
