Pasta spinach bake

Introduction

Number of Servings: 6

Ingredients

    1 1/2 cups dry whole wheat pasta (I use penne)
    1 28 ounce jar pasta sauce (I use Amy's Low Sodium Marinara)
    1 10 ounce package frozen cut leaf spinach, thawed, drained and excess water pressed out
    1 15 ounce can cannellini beans, rinsed and drained
    1/2 cup nonfat ricotta cheese
    1/4 cup parmesan cheese
    1 Tbsp garlic powder
    1/4 cup nonfat shredded mozzarella cheese

Directions

Cook pasta according to directions. Drain, and put in medium bowl. Toss with spinach, beans, ricotta, parmesan and garlic powder (I usually use my hands, as it's easier to break up the ricotta that way.)

Spray 8x8 glass or microwaveable casserole dish with light cooking oil spray. Spread a third of the jar of pasta sauce on the bottom of the dish. Spread half the pasta mixture on top of that. Spread another third of the sauce, followed by the rest of the pasta mixture. Top with the remainder of the sauce.

Cover and cook in the microwave until cooked through, 15 to 20 minutes. Uncover, top with the mozzarella and zap for another minute or two, until the cheese melts.

Makes 6 services, 1 1/2 cups each
