mashed potatoe casserole

Ingredients

    6 potatoes peeled and diced
    2 cups chicken broth
    2 cups water
    2 tblsp light margarine
    1 cup shredded cheese reduced fat
    1/2 cup nonfat milk

Directions

put water chicken broth and potatoes together in large pot add potatoes and bring to boil and cook until fork tender

while potatoes cook cook bacon and crumble ( i broil mine to remove fat and allow to drain off during cooking) set aside

drain reserving liquid place potatoes in large bowel add butter and milk season with salt and pepper add some of the reserved liquid to make smoother ( they should be a little stiff)

add cheese and bacon pour in baking casserole sprayed with cooking spray and bake covered for 20 minutes uncover and bake additional 5-10 minutes
