Sunshine Carrots

Introduction

Number of Servings: 6

Ingredients

    4 cups carrots sliced ( crinkle cuts are nice)
    1/2 cup mayo
    2 Tbsp minced onion
    2Tbsp prepared horseradish
    4 tbsp butter melted
    1 cup crushed slatine crackers (Ritz don't work well here)

Directions

Boil Carrots until fork tender yet still a bit crunchy then drain and return to pot
Mix Mayo, Horseradish and onion.
Add mayo mixture to carrots and toss. Add salt and pepper to taste
Dump carrot mixture into buttered casserole

Metl Butter. Add to crushed carrots. Spread crackers on top of Carrots.

Bake 350 for 30 minutes
