IntroductionThis is my Grandma's recipe--I don't like soup, but this is a winner! Creamy and filling, perfect for a cold day. This is my Grandma's recipe--I don't like soup, but this is a winner! Creamy and filling, perfect for a cold day.
4 carrots, sliced (about 1/2 a pound)
1 medium onion, sliced
1 rib celery, sliced (a few leaves are good)
1 large potato, peeled and diced
2-3 sprigs of parsley
1 tsp. salt and pepper to taste
1 can (10 1/2 oz. size) chicken broth
1 cup water
3/4 cup cream (or half and half)
2) Simmer until vegetables are done
3) Blend in blender and add cream
4) Re-heat to desired temperature
The recipe can easily be doubled to serve 8, delicious the next day.
