Quick Meat Loaf

Introduction

I just threw this together last night for something quick. I just threw this together last night for something quick.
Number of Servings: 6

Ingredients

    1 pd. Lean Ground Beef
    1/4 Cup Chopped Sweet Onion
    1/4 Cup Yellow Bell Pepper
    8 oz. Low Fat Cheddar Cheese
    8 Tbls. Ketchup
    2 Tbls. Mustard

Directions

Put Ground Beef into a Microsafe container. I use a 1 3/4 quart Tupperware.
Chop Onion and Bell Pepper, put in with Ground Beef.
Add grated Cheddar Cheese, then Ketchup and Mustard.
Mix together real well.
Mold Ground Beef into container, then make an opening in the center of beef mixture to allow for meat oils.
Put into Microwave, covered, for 5 mins. Take meatloaf out and get rid of excess oils. Put meatloaf back into Microwave, covered, for 10 mins. Take out again to blot excess oils with a paper towel. If needed, put meatloaf back in, uncovered, for 5 more mins.
You can also put a topping on the meatloaf the last 5 mins. of cooking. Put together in a small bowl, 1/4 cup of Ketchup. 2 tsp. Mustard, and 2 packets Splenda...
Spoon mixture on beef, and cover real well, then pop back into microwave for the last few mins.
