Introduction

Number of Servings: 6

Ingredients

    3/4 cups whole wheat pastry flour (or white wheat)
    3/4 cup oat bran cereal
    1/2 cup brown sugar
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/3 cup banana, mashed
    1/2 cup plain 2% yogurt
    1 egg or 2 egg whites
    2 Tbs. Olive Oil
    1/2 tsp. vanilla
    1/2 cup carrots, shreded
    1/2 cup dates, chopped
    1/2 cup walnuts, chopped


Directions

Mix dry ingredients. Mix liquid ingrediants in a separate bowl. Combine and stir until moistened. Fold in carrots, dates and walnuts. Place in lightly greased muffin tin. Fill s2/3 full. Bake at 400 for 18-20 minutes. Makes 6 meal muffins or 12 snack muffins. These freeze well.
