Buffalo Style catfish nuggets (no frying necessary!)

Introduction

If you don't like spicy food, omit the sauce! If you don't like spicy food, omit the sauce!
Number of Servings: 8

Ingredients

    2T Flour
    1t garlic powder
    1t paprika
    1/2 t onion powder
    1/2 t salt
    1/8 t ground black pepper
    2 large egg whites, lightly beaten
    1 1/2 c coarsely crushed cornflakes
    1 lb catfish fillets, cut into 1/2" thick strips
    cooking spray

    For Sauce:
    1/3 c hot wing sauce
    1 t tabasco sauce (or equal)
    1/2 t worcestershire sauce
    1 T butter

Directions

Makes 8 Servings

Preheat oven to 400 degrees F.

Combine first 6 ingredients in shallow dish. Place egg whites in separate shallow dish. Place cornflakes in third shallow dish.

Dredge each catfish strip in the following order: flour - egg - cornflakes. place on baking sheet coated with cooking spray.

lightly coat strips with cooking spray. bake for 10 minutes or until crispy and cooked through, turning once.

For Sauce:
Combine hot sauce, tabasco, worcestershire sauce in small saucepan. Bring to a boil. reduce heat, simmer for 1 minute. drizzle over fish.

serve with celery, carrots, and fat free ranch or bleu cheese dressing.
