Melissa's EASY Turkey Minestrone

Ingredients

    1 tbsp olive oil
    1 tbsp minced garlic
    1 package(s) frozen chopped onions
    1 package(s) frozen mixed vegetables
    2 cube(s) chicken broth, dry cubes
    3 cup(s) water
    14 1/2 oz Del Monte Diced Tomatoes With Basil, Garlic And Oregano
    15 1/2 oz canned tomato sauce
    15 1/2 oz canned pinto beans
    15 oz Green Giant Cut Green Beans, Canned
    15 oz chopped frozen spinach
    1 tsp dried oregano
    2 tbsp basil
    1/2 tsp table salt
    1/2 tsp black pepper
    4 serving(s) Barilla Three Cheese Totellini (2/3 cup)
    2 tbsp grated Parmesan cheese
    10 oz uncooked ground turkey breast

Directions

1.) Over Medium-low heat, in a large stock pot or skillet, heat olive oil and sautee garlic and frozen onions for about 2-3 minutes. Add thawed ground turkey and satuee until cooked through. Add frozen mixed veggies and sautee for 2-3 minutes.

2.) Heat 3 cups of water in the microwave with the dry broth cubes for 3 minutes, crush the cubes and add to the pot. Add the diced tomato and tomato sauce. Bring this all to a boil, stirring frequently then reduce heat to low. Add pinto beans, green beans, thawed frozen spinach (DO NOT SQEEZE OUT WATER), oregano, basil, salt and pepper. Simmer for 30-40 minutes (the better!)

3.) Prepare torellini as directed. Drain and set aside.

4.) Once soup is cooked and pasta is ready add 1/8th of pasta into each bowl and ladle 1/8th of soup on top. Sprinkle with Parmesan and serve!
