Broccoli Corn Bake

Introduction

Delicious casserole type side dish. Delicious casserole type side dish.

Ingredients

    4 cups chopped broccoli
    1/4 cup butter or margarine
    2 cups seasoned stuffing mix
    1/2 cup milk
    2 tablespoons flour
    3/4 teaspoon salt
    1/8 teaspoon black pepper
    2 eggs
    1 (16 oz.) can cream-style corn

Directions

Preheat oven to 350°. Grease a 1 1/2 -quart casserole dish.

Trim broccoli and cut into 1 inch pieces. Steam in the microwave (or blanch in boiling salted water for 3 minutes; drain) and set aside.

In a small saucepan over low heat, melt butter or margarine. Stir in stuffing mix; set aside.

In a large bowl, beat eggs, mix in milk, flour, salt & pepper until well blended. Stir in corn and half of the reserved stuffing mixture until well blended. Stir in broccoli. Pour into baking dish. Sprinkle with remaining stuffing mixture.

Bake for 60 minutes or until center is puffed and set.

* If you prefer to use frozen broccoli, use 2 packages (10 oz. each) or 1 1/2 packages (16 oz. each) cut broccoli. Cook according to package directions and drain (you will need about 4 1/2 cups cooked).
