8 oz lasagna noodles 2 cups mozzarella cheese, shredded 1/2c parmesan cheese, grated 12 oz or 3/4 carton low fat cottage cheese 1 jar spaghetti sauce 1 small can mushrooms 1 lb ground turkey 1/2 c onions, chopped salt/pepper/garlic to taste
First, heat oven to 350 degrees F. Then brown ground turkey, onion, garlic, salt and pepper together. Add jar of spaghetti sauce to meat mix and stir to combine. Put layer of noodles (I use the over ready kind) in an oven safe pan and spoon over enough meat/sauce mix to cover noodles. Spoon about 1 cup of cottage cheese and 1/2 c mozzarella cheese and 1/4 c parmesan cheese over meat mixture. Add another layer of noodles and repeat covering with meat mix and cheeses. For final layer of noodles, cover with remainder of meat/sauce mix. Cover pan with aluminum foil and put in over for appx 1 hour, until noodles are cooked. About ten minutes before hour is up, take aluminum foil off and add more mozzarella cheese. Put back in over and cook until cheese melted. Let set for 5-10 minutes once removed from oven. makes 12 servings.
