Potato Bumps

Introduction

A combination of spices could be used for these, and they would still be as delicious! A combination of spices could be used for these, and they would still be as delicious!
Number of Servings: 8

Ingredients

    6 unpeeled, medium potatoes
    1 Tbsp olive oil
    2 tsp dried parsley
    1 1/2 tsp salt
    1 tsp chili powder
    1 tsp paprika
    1/2 tsp thyme
    1/4 tsp garlic powder
    1/8 tsp cayenne pepper
    pinch rosemary

Directions

1. Pre heat oven to 425 F (220 C).
2. Cut potatoes into cubes and place in mixing bowl. Add oil and toss to coat.
3. Combine remaining ingredients in a small cup or bowl. Sprinkle over potatoes and toss.
4. Spread potatoes out onto a greased baking sheet. bake uncovered for about 45 minutes, stirring twice until browned and tender.

Makes 8 servings.
