Chile Paste

Introduction

A chili paste I came up with to spice up dishes. It is based off of the Thai condiment Nam Prig Pow, which I love. This paste is mild with a warm heat, my family isn't as much of a hot head as I am. If you like though substitute half of the Anaheim chiles for dried indian chilies for more kick and flavor. A chili paste I came up with to spice up dishes. Number of Servings: 32

Ingredients

    1 cup vegetable oil
    1 cup chopped garlic
    1 cup chopped onion
    4 ounces Anaheim chiles
    1/4 cup brown sugar
    1 tablespoon salt

Directions

Heat oil in a small pot. Add garlic, onion and chilies, fry until garlic begins to turn golden brown. Pour the oil mixuture into a food processor and blend until smooth (be careful the oil is HOT). Add remaining ingredients and blend to mix. Store in an airtight container in the refrigerator.

Makes 32 (1 tablespoon) servings.
