Bread Pudding with Apples

Ingredients

    4 slices of cinnamon raisin bread, cubed
    1 cup chopped apples (peeled)
    1/2 cup brown sugar
    2 eggs
    1 cup non-fat evaporated milk
    1/2 cup skim milk
    1 1/2 tsp vanilla
    1/4 tsp cinnamon
    1/8 tsp nutmeg

Directions

1. Preheat oven to 350 F (175 C)
2. Spray an 8x8 inch pan with non-stick spray, set aside
3. Toss bread cubes and apples together in a large bowl
4. In a separate bowl, whisk together brown sugar & eggs
5. Add evaporated milk, skim milk, vanilla, cinnamon, & nutmeg, whisk again
6. Pour egg mixture over bread cubes and apples, stir well. Let stand for 5 minutes for bread to absorb liquid
7. Transfer mixture to baking pan, making sure apples are evenly distributed throughout pan
8. Bake for 50 minutes, until bread is a deep golden brown and puffed up. A knife inserted in the centre should come out clean
