Sue's Cranberry Relish

Introduction

Make this 1-2 days ahead of when you want to serve it. This is a holiday favorite at our house.

I use leftovers of this for making smooties, just add a 1/2 to 1 cup to a container of fat free yogurt in a blender for a nourishing, tasty drink.
Make this 1-2 days ahead of when you want to serve it. This is a holiday favorite at our house.

I use leftovers of this for making smooties, just add a 1/2 to 1 cup to a container of fat free yogurt in a blender for a nourishing, tasty drink.

Number of Servings: 10

Ingredients

    16 oz. cranberries
    1 cup Splenda,
    1/4 celery diced
    1 small orange
    3/4 cup walnuts finely chopped
    2 boxes of cherry or raspberry sugar freet Jell-o

Directions

Grind cranberries in processor, add 1 cup of Splenda and let sit for 30 minutes.

Process walnut to fine chopped with an orange that has had rind, seed, and white parts removed. Toss this with cranberry mixture and celery.

Dissolve 2 boxes of Jello in 2 cups ONLY of hot water (no cold water). Pour over cranberry mixture and mix well. Chill until set, preferably overnight.

10 1/2 cup servings
