Introduction

Nice healthy substitute for regular pumpkin pie. You will never have to miss out on that spicy pumpkin taste again! Nice healthy substitute for regular pumpkin pie. You will never have to miss out on that spicy pumpkin taste again!
Number of Servings: 8

Ingredients

    One 15 oz. can pumpkin
    1-1 1/2 cups Nonfat cottage cheese
    2 eggs
    1/2-3/4 cup sugar
    1 tsp. cinnamon
    1/4 tsp cloves
    1/4 tsp. salt or to taste
    1/4 tsp. allspice

Directions

Blend eggs, pumpkin, cottage cheese, spices, and sugar in a bowl. Beat for about a minute with an electric beater to break up the cottage cheese a little more. Pour into a pie pan that has been generously oiled with olive oil. Bake in a 350 degree oven for 35 minutes

    Pretty yummy. But I just couldn't get the cottage cheese to blend very well. The nutritionals surprised me given the nature of the ingredients, but it looks like you have 2 cups of eggs listed rather than 2 eggs! This will alter the fat & cholesterol significantly! - 2/8/09

  • I used 1.5 cups full fat cottage cheese, no sugar, and 4 tb honey instead. I baked for about 60-70 min. It is very good. I will make it again for sure. I made 4 servings out of the whole thing. - 7/2/09
