Number of Servings: 8

Ingredients

    1 Package Bean Cuisine - Thick as fog Split Pea Soup
    8 Cups water
    2 Cups chopped:
    Onions
    Leeks
    Carrots
    Celery
    Potatoes
    Salt & pepper to taste
    Croutons
    Chopped parsley

Directions

1. Put all ingredients except croutons and parsley in large pot. Bring to boil, put lid on pot and let simmer for 1 1/2 - 2 hours.
2. Puree in blender or food processor or stir vigorously with a whisk until soup is smooth.
3. Serve with croutons and chopped parsley.

Makes 8 servings, freezes well.

I usually cook this soup with a hambone or smoked farmers sausage, not included in calory count.
