IntroductionGreat low cal, low fat muffin! Great low cal, low fat muffin!
1 1/2 cups Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Cinnamon, ground
1/4 tsp Nutmeg, ground
1/8 tsp Ginger, ground
1/3 cup Honey
1/2 cup Yogurt, plain, low fat
1/3 cup Applesauce, unsweetened
1/2 tsp Vanilla Extract
1 1/2 cups Carrots, grated
- Mix together dry ingredients- flour, soda, powder, cinnamon, nutmeg, ginger, allspice.
- Mix together wet ingredients- honey/brown sugar, egg, yogurt, applesauce, vanilla and the carrots.
- Stir the wet and dry ingredients together until just moistened.
- Bake for about 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Makes 18 muffins
