Had this soup at a Sushi Restaurant and loved it. Very tasty and low on calories and fat. Can be made with any vegetables you have on. I found my jar of MISO at a health food store. Ingredients

6 cups water
4 tbsp soy sauce
1 tsp sesame oil
dash fresh ground pepper
1 tsp ginger
1 cup Chinese or regular cabbage, finely chopped
4-5 mushrooms sliced
1 handful snow peas
1 stalk thinly sliced celery
4 chopped green onions
3 tbsp miso dissolved in 1/2 cup hot water
Directions
Makes 8 cups, can be cut in half or doubled. I double and freeze for take to work lunches. Can use any vegetables you have on hand. Suggestions leeks; onions; been sprouts; lettuce; green peppers; green peas; potato. Can also add prawns, shrimp or other seafood; diced firm tofu adds body and flare.
Put all ingredients, except MISO and green onions into a pot and bring to a boil. Reduce heat and simmer 4 minutes. Add MISO and stir until blended. Serve and garnish with green onions.
