Introduction

Mashed cauliflower for those of us on carb restricted diets. Less fat than the South Beach & Atkins versions. It's a nice soup if you double it, too. Mashed cauliflower for those of us on carb restricted diets. Less fat than the South Beach & Atkins versions. It's a nice soup if you double it, too.
Number of Servings: 1

Ingredients

    1c cooked cauliflower-until pretty soft
    1-2 tsp chicken broth or prepared boullion
    1 tsp Butter flavored spray(Smart balence or I can't believe it's not butter)
    1/4tsp garlic powder
    salt & fresh ground pepper to taste
    * I actually use 1/4 tsp Paula Deen House Seasoning (PDHS) instead of the salt pepper & garlic powder, but the three work if you can't find PDHS.

Directions

Throw all ingredients into a blender (high speed) or food processor. Process to desired consistency
