Please note that I have put the prep time as 20 minutes but it does require standing time of 4-12 hours.
This is an old teabread recipe passed down to me from my mum. It cuts better if you leave it overnight before eating.

This is an old teabread recipe passed down to me from my mum. It cuts better if you leave it overnight before eating.

Number of Servings: 16

Ingredients

    1lb mixed fruit (raisins, sultanas, currants, mixed peel)
    1 cup brown sugar
    1 cup tea (brewed)
    2 cups self raising flour
    1 large egg

Directions

Please note that I have put the prep time as 20 minutes but the mixed fruit needs to be soaked in the tea for between 4 and 12 hours.

Makes approx 16 slices.

1. Put the mixed fruit, brown sugar and tea in a bowl and leave for a minimum of 4 hours or overnight.

2. Add the flour and egg and mix.

3. Put mixture into a loaf tin and bake for 45-50 minutes at 350F (180C, Gas 4)

4. Take out of the oven and leave to cool.

Great served with butter as a treat.

NB It cuts better if you leave it overnight before eating.
