2 Tbsp unsalted butter
2 leeks, chopped
1 clove garlic, finely chopped
4 cups vegetable broth
1 head romaine lettuce - rinsed, dried, and chopped (~4 cup)
1/4 cup chopped fresh tarragon
1/2 cup unsweetened soy milk (or 2% milk)
salt and pepper to taste
Increase heat to medium and stir in lettuce. Cook until wilted (~5 minutes) then stir in soy milk and tarragon.
Blend until smooth, and season with s&p to taste.
