Black Eyed Peas, Kale & Bacon

Introduction

Although this one has real bacon it is still low in fat and high in nutrients and fiber. Oh! And did I mention, yummy? Although this one has real bacon it is still low in fat and high in nutrients and fiber. Oh! And did I mention, yummy?
Number of Servings: 2

Ingredients

    1 can black eyed peas (drained)
    4 cups fresh braising greens, chopped
    1/3 cup fat free, low sodium chicken broth
    2 tsp minced garlic
    1 tsp cider vinegar (optional)
    3 strips bacon, cut into bite size pieces

Directions

Cook bacon pieces in a large skillet. Drain fat. Add garlic and saute for 1 min. Add black eyed peas and saute another 2 minutes. Then add greens and and combined chicken broth and vinegar. Bring heat to low and cover. Let simmer about 30 minutes or until greens are tender and wilted.

Serve right away for best results.
