Introduction

This is an easy and flavorful dinner dish which features juicy pork tenderloin with a fruity glaze. Note that the ingredients below should be used; the recipe calculator here did not allow me to put in the correct quantities. Ingredients

    3 # pork tenderloin
    2 medium apples, pared & sliced
    1.5 oz. box raisins (small box)
    1/4 cup unsweetened applejuice
    2 tbsp. cornstarch or 3 tbsp. flour

Directions

Place pork tenderloin in baking dish.

In a bowl, mix the slice apples, raisins, and cornstarch or flour until combined. Spread over top and around pork. Pour apple juice over top of pork. Cover and bake for 1 hour at 400 degrees.
Uncover and baste pork with apple/raisin mixture and apple juice. Recover and bake an additional 15-20 minutes until pork is no longer pink, but still juicy and tender. Remove pork from oven and uncover. Slice in 1" pieces 3/4 of the way down (so not fully sliced). Baste with juice between the slices and let sit for 5 minutes. Serve.
